Cedar Plank Roasted Salmon

If you're looking for a
different way to prepare and serve salmon, try this method. The salmon
will be infused with the savoury aroma of the cedar planks, which can
also be used as serving
pieces for a unique
presentation.
Ingredients

1 large or 4 small |
Cedar Planks (can be
found at Safeway) |
|
4 – 170 gm (6
oz) pieces |
Fresh Salmon |
|
125 ml (1/2 cup) |
Sweet
Chili |
|
5 ml (1 tsp) |
Seasoning Salt |
Method
Soak cedar plank or planks
overnight in water or for at least 12 hours. Remove and preheat oven to
170º C (325º F). Generously rub each piece of fish with sweet chili
sauce and place on plank. Season with the seasoning salt and set the
plank on a tray appropriate for catching any dripping that may occur.
Place in oven on the middle rack and cook until fish is fully cooked,
approximately 20 minutes. Remove from plank and serve or for
presentation serve directly on the plank.
