Pecan Apple Bake for Two

This recipe is a variation on apple "pie"
that I learned from a friend who is now a chef at a
prestigious ski resort in New Zealand. It is a simple recipe that can be
made even if you
forgot about dessert. You can also use your favourite caramel sauce
instead of butter and brown sugar.

Ingredients

Granny Smith Apples,
peeled and sliced |

30 ml (2 tbsp) |
Hard Butter |

15 ml (1 tbsp) |
Brown Sugar |

5 ml (1 tsp) |
Cinnamon |

15 ml (1 tbsp) |
Pecans, toasted and
roughly chopped |

Method
Peel, core and slice 2 Granny
Smith apples and put in a bowl. (Add a little lemon juice if
they will sit for too long.) Mix thoroughly with the butter,
brown sugar, cinnamon and pecans. Grease the inside of a
23-cm (9-inch) pie plate with some butter and lay out the
apple mixture. Using a smaller plate, cut out a piece of
puff pastry that will cover the apples on the plate. Egg
wash the inner rim of the plate where the puff pastry will
go and place the puff pastry over top. Egg wash the puff
pastry and make a slit in the dough. Bake at 175º C (350º F)
for about 10 minutes or until the puff pastry is golden
brown. Serve with your favourite vanilla ice cream. This
recipe can be held and baked just as you need it, even after
the main course while you relax, have a drink and wait for
dessert to be served.
