Lemon Chicken Gremolada (Meat)

Ingredients

6-150 g (5-6oz) |
Boneless Skinless Chicken Breasts |
|
2 |
Juice of Lemons. Zest the Peel and
Mince |
|
15 ml (1 tbsp) |
Garlic, Minced |
|
15 ml (1 tbsp) |
Fresh Parsley, Minced |
|
5 ml (1 tsp) |
Cracked Black Pepper |
|
125 ml (1/2 cup) |
Olive Oil |
|
|
Pinch of Salt |
Method
Make your “gremolada” by mixing the
lemon peel, garlic and parsley together. Place chicken breasts in an
appropriate container. Mix well with olive oil, salt, pepper and
approximately half of the gremolada mixture. Marinate in the fridge
for at least an hour. Grill chicken until thoroughly cooked,
approximately 20-25 minutes. Sprinkle the remaining gremolada on the
cooked chicken and serve.
